Pate
Ingredients
  • 250 g chicken liver (trimmed)
  • 1 purple onion
  • 5 cloves garlic
  • 50ml coconut oil
  • 2T fresh herbs, eg sage, thyme, rosemary
  • 2 anchovies
  • 1/2 C port
Instructions
  1. Fry everything except the port and livers until the onion is soft, add the liver and fry until cooked on the outside.
  2. Add the port, and cook until the livers are cooked through.
  3. Puree in a blender, adding more oil if necessary.
Notes
I have made substitutions to make the recipe more consistent with what I would do.
