This is one of my favorite (and simple) liver and onions recipes:
Ingredients:
  • ¾ lb liver (lamb, chicken, or beef)
  • 6 slices of bacon
  • ½-1 whole yellow onion

Cooking:

In cast-iron skillet, cook bacon until all the fat is rendered out and crispy.

Remove bacon and set aside to cool and then break into large crumbles for later.

Slice onion into thin strips and add to bacon fat. Cook until translucent.

Add liver and cook 2-3 minutes on each side, leave pink in the middle.

Remove from heat, serve with bacon sprinkled on top.

Add salt and pepper to taste.
